CHOCO-VINO CHALLENGE
FIRST - THE WINE
Rule #1: Citrus Needs Citrus
Crispy, citrusy dry fresh fruit wines (Sauvignon Blanc, Pinot Gris, steel Chardonnay) need citrusy flavored chocolate. If your white wine tasting notes are apple, orange, lime, lemon, grapefruit - pair it up with a truffle that has the same flavor profile. Match the more tropical peach, pear, mango, flavored truffles with the more tropical white wines (Viognier, Petit Manseng) for a perfect pairing every time. |
Rule #2: Big Needs Big
Big chocolate needs big wine. In the red category there are big, bigger and biggest wine varietals. Dark chocolate with less sugar content offers a rich cocoa flavor. Full-bodied red wines should be paired with dark chocolate. A Cabernet Sauvignon, Malbec or Zinfandel will make perfect dark chocolate pairings. A lighter Pinot Noir or Merlot pairs well with dark chocolate around the 55% cocoa mark. |
Rule #3: Sweet Needs Sweet
Chocolate based on sweeter chocolate (milk or white chocolate) must be paired with a wine that matches the sweetness or is sweeter than the chocolate you are pairing it with; otherwise, you can end up with a bitter or sour taste. Sweeter white grapes like Riesling, Moscato & dessert wines pair nicely with sweeter chocolate. A classic pairing is Port or Sauternes ... perfect wine to accent white or milk chocolate. |
